Msemen (Moroccan Rghaif) — Layered, Honey-Butter Pan-Fried Flatbread

Ingredients

For the Dough

  • 4 cups (500 g) all-purpose flour
  • 1 cup (150 g) fine semolina
  • 1½ teaspoons salt
  • 1 teaspoon sugar
  • 2 teaspoons instant yeast (optional, for a softer texture)
  • About 2 cups (480 ml) warm water

For Layering

  • ½ cup (120 ml) vegetable oil
  • ½ cup (115 g) melted butter
  • 1 cup (150 g) fine semolina for sprinkling

Honey Butter (Optional)

  • ¼ cup honey
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, combine the flour, semolina, salt, sugar, and yeast.
  2. Gradually add the warm water while mixing until a soft, smooth dough forms.
  3. Knead for 10–12 minutes until the dough is elastic and silky. Cover and let it rest for 20–30 minutes.
  4. Lightly oil your hands and divide the dough into 12–16 equal balls. Coat each ball with a little oil, cover, and let rest for another 15–20 minutes.
  5. Mix the melted butter and vegetable oil together.
  6. On a well-oiled work surface, flatten one dough ball with your hands until it becomes a very thin, almost transparent square.
  7. Brush generously with the butter-oil mixture and sprinkle lightly with semolina.
  8. Fold the four sides toward the center to form a square, adding a little more butter mixture between folds if desired.
  9. Repeat with the remaining dough balls.
  10. Cover the folded squares and let them rest for 10–15 minutes.
  11. Gently flatten each square into a 6–7 inch (15–18 cm) square without tearing the layers.
  12. Heat a lightly greased skillet or griddle over medium heat.
  13. Cook each msemen for about 3–4 minutes per side, turning several times until evenly golden brown and crisp with beautiful flaky layers.
  14. Mix the honey and melted butter together and brush over the warm msemen, if desired.

  • Honey and melted butter
  • Moroccan mint tea
  • Soft cheese or cream cheese
  • Strawberry or apricot jam
  • Nutella or almond butter
  • Scrambled eggs for a savory breakfast

Tips

  • Letting the dough rest makes it much easier to stretch paper-thin.
  • Keep the dough well-oiled to prevent sticking and drying out.
  • Cook over medium heat so the layers cook through without burning.
  • Leftover msemen can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat in a dry skillet to restore their crisp exterior.
