Ingredients

Base
- 2 cups cooked rice (white, brown, or wild)
- 2 cups cooked chicken, shredded or cubed
- 2 cups broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese (plus extra for topping)
- ½ cup shredded mozzarella (optional for stretch!)
Sauce
- 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
- ¾ cup sour cream (or Greek yogurt)
- ½ cup milk
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt & pepper to taste
Optional Add-Ins
- ½ cup sautéed onions
- ½ cup peas or corn
- ½ cup cooked bacon pieces
- Dash of hot sauce for a little kick

Instructions
1. Preheat
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2. Prep Broccoli
- Fresh broccoli: Steam for 3–4 minutes until crisp-tender.
- Frozen broccoli: Thaw and drain well.
3. Make the Creamy Sauce
In a large bowl, whisk together:
- cream of chicken soup
- sour cream
- milk
- melted butter
- garlic powder, onion powder, paprika
- salt & pepper
4. Combine Everything
Add to the bowl:
- cooked rice
- cooked chicken
- steamed broccoli
- cheddar + mozzarella
Mix until evenly coated.
5. Transfer to Baking Dish
Spread mixture into the prepared dish and sprinkle extra cheddar on top.
6. Bake
Bake for 25–30 minutes, or until the casserole is hot, bubbly, and golden around the edges.
