NO BAKE CHOCOLATE OAT BARS

Ingredients:

  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup peanut butter (creamy or chunky)
  • 1/4 cup honey or maple syrup (for sweetness)
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (semi-sweet or milk chocolate)
  • 1/4 cup peanut butter (for the chocolate topping)

Instructions:

  1. Prepare the Pan:
    Line an 8×8-inch or 9×9-inch square baking pan with parchment paper or lightly grease it. This will make it easy to remove the bars once they’re set.
  2. Make the Oat Mixture:
    In a medium saucepan over medium heat, melt the butter, peanut butter, and honey together. Stir until everything is well combined and the mixture is smooth. Remove from the heat and stir in the vanilla extract.
  3. Combine with Oats:
    Add the rolled oats to the peanut butter mixture and stir until the oats are evenly coated.
  4. Press into the Pan:
    Pour the oat mixture into the prepared baking pan. Use a spatula to press it down firmly into an even layer. Be sure to press it down well so that the bars hold together when cut.
  5. Make the Chocolate Topping:
    In a microwave-safe bowl, combine the chocolate chips and the additional peanut butter for the topping. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  6. Top the Bars:
    Pour the melted chocolate-peanut butter mixture over the pressed oat mixture in the pan. Use a spatula or the back of a spoon to spread the chocolate evenly over the top.
  7. Chill:
    Place the pan in the refrigerator for about 1 to 2 hours or until the chocolate has hardened and the bars are firm.
  8. Cut and Serve:
    Once chilled and set, remove the bars from the pan using the parchment paper. Cut into squares or bars and serve!

Tips:

  • Storage: These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for a week.
  • For a different twist: Add some chopped nuts, dried fruit, or mini marshmallows into the oat mixture before pressing it into the pan.
  • Vegan Option: Use maple syrup instead of honey, and ensure the chocolate chips are dairy-free to make the bars vegan-friendly.
