Cheesy Carrot Flatbreads Recipe

Ingredients

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup grated cheese (cheddar or mozzarella work well)
  • 1/4 cup olive oil (plus extra for brushing)
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano (or Italian seasoning)
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/4 cup warm water (you may need a little more if the dough is too dry)
  • 1 egg (for brushing, optional)

Instructions

  1. Prepare the Carrots:
    • Grate the carrots using a box grater or food processor. You want them finely grated so they mix easily into the dough.
  2. Make the Dough:
    • In a large mixing bowl, combine the flour, baking powder, garlic powder, oregano, salt, and black pepper. Mix to combine.
    • Add the grated carrots, cheese, and olive oil into the flour mixture. Stir well to distribute the carrots and cheese evenly.
    • Gradually add the warm water, mixing until a dough forms. The dough should be soft but not too sticky. Add more water a tablespoon at a time if needed.

    • Preheat a skillet or frying pan over medium heat.
    • Divide the dough into 4-6 equal portions, depending on the size of flatbreads you want.
    • Roll each portion into a ball and then flatten it into a circle or oval shape with a rolling pin, about 1/4 inch thick.
  4. Cook the Flatbreads:
    • Brush a little olive oil onto the skillet. Place one flatbread in the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy. Press gently with a spatula to ensure even cooking.
    • Repeat with the remaining pieces of dough, brushing the pan with oil as needed.
  5. Optional Egg Wash:
    • For a glossy finish, beat the egg and brush it lightly over the cooked flatbreads. This step is optional, but it gives the bread a nice sheen and extra golden color.
  6. Serve:
    • Serve the cheesy carrot flatbreads warm. They make a perfect snack on their own or can be served as a side with soups, salads, or dips.
