Pineapple Coconut Dream Cake

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained (reserve the juice)
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 1/2 cups whipped topping (like Cool Whip)
  • 1 cup sweetened shredded coconut, toasted (for topping)
  • 1 teaspoon vanilla extract

For the Topping:

  • Whipped cream (for garnish)
  • Additional toasted coconut (for garnish)

Instructions:

Step 1: Prepare the Cake

  1. Bake the cake: Follow the instructions on the box to make the cake. Typically, you’ll need eggs, oil, and water.
  2. Let it cool: After baking the cake in a 9×13-inch baking pan, let it cool completely.

Step 2: Prepare the Filling

  1. Make the filling: In a large bowl, mix together the softened cream cheese and powdered sugar until smooth.
  2. Add the pineapple: Fold in the drained crushed pineapple (save the juice for later if you like). Stir in vanilla extract.
  3. Fold in the whipped topping: Gently fold in the whipped topping until everything is well combined.

Step 3: Assemble the Cake

  1. Prepare the cake base: Once the cake has cooled, use a fork to poke holes all over the top of the cake. This will help the filling absorb into the cake.
