Pecan Cheesecake Pie

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • ¼ cup melted butter

For the Cheesecake Filling:

  • 1 (8 oz) package cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Pecan Topping:

  • 1 ½ cups pecan halves
  • ½ cup dark corn syrup
  • 1 tablespoon butter, melted
  • ½ cup brown sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

1. 

Prepare the crust:

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Stir until the mixture is fully combined and crumbly.
  • Press the mixture into the bottom of a 9-inch pie dish, covering the bottom and slightly up the sides.
  • Bake for 10 minutes, then remove from the oven and let it cool.

Make the cheesecake filling:

  • In a large bowl, beat the softened cream cheese with sugar until smooth.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract and sour cream, beating until everything is well combined.
  • Pour the cheesecake filling into the cooled crust.

Bake the cheesecake filling:

  • Bake at 350°F (175°C) for 20-25 minutes, until the edges are set but the center is slightly jiggly.
  • Remove from the oven and let it cool for 10 minutes.

Make the pecan topping:

  • In a bowl, combine the pecans, corn syrup, melted butter, brown sugar, heavy cream, vanilla extract, and a pinch of salt. Stir until the mixture is well combined and the pecans are coated.
  • Gently spoon the pecan mixture over the cooled cheesecake layer.

Bake the pie:

  • Return the pie to the oven and bake for an additional 15-20 minutes, until the pecan topping is set and the edges are golden brown.
  • Let the pie cool completely at room temperature, then refrigerate for at least 3 hours or overnight before serving.

Serve and enjoy:

  • Once the pie has fully cooled and set, slice and serve. Enjoy the sweet, creamy, and nutty combination!
