Fried Potatoes and Onions with Smoked Sausage

Ingredients:

  • 4 medium-sized potatoes
  • 1 onion, chopped
  • 200g smoked sausage (optional, but adds great flavor)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs (optional: thyme or parsley)

Instructions:

  1. Prep the Ingredients:
    • Peel and slice the potatoes into thin rounds.
    • Slice the smoked sausage into bite-sized pieces.
    • Chop the onion.
  2. Cook the Potatoes:
    • Heat a large pan or skillet over medium heat and add the olive oil or butter.
    • Add the sliced potatoes to the pan, spreading them out evenly. Fry them, turning occasionally, until they start to become golden and crispy (about 10-12 minutes).
  3. Add the Onions and Sausage:
    • Once the potatoes are nearly done, add the chopped onions and sausage to the pan.
    • Cook for another 5-7 minutes, stirring occasionally, until the onions are soft and slightly caramelized, and the sausage is heated through.
  4. Season:
    • Season the dish with salt and pepper to taste. You can also add some fresh herbs like thyme or parsley for extra flavor.
  5. Serve:
    • Serve your fried potatoes and onions with smoked sausage hot, either as a main dish or a side.
