Instructions
:
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, combine dry ingredients: oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the wet ingredients: milk, egg, vanilla extract, applesauce (or grated apples), and melted coconut oil (or butter).
- Pour the wet ingredients into the dry ingredients and stir until combined. If you’re adding nuts or raisins, fold them in at this stage.
- Spoon the batter into the muffin cups, filling each about 3/4 full.
- Bake for about 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
