Healthy Homemade Snack (Apple Oatmeal Delight)

Ingredients

:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour (or all-purpose flour)
  • 1/2 cup brown sugar (or substitute with honey or maple syrup for a healthier version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk (you can use any plant-based milk like almond or oat milk)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce or grated fresh apples (about 1 medium apple)
  • 1/4 cup coconut oil or melted butter (or any healthy oil of your choice)
  • Optional: 1/4 cup chopped nuts or raisins for extra texture

Instructions

:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, combine dry ingredients: oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the wet ingredients: milk, egg, vanilla extract, applesauce (or grated apples), and melted coconut oil (or butter).
  4. Pour the wet ingredients into the dry ingredients and stir until combined. If you’re adding nuts or raisins, fold them in at this stage.
  5. Spoon the batter into the muffin cups, filling each about 3/4 full.
  6. Bake for about 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Tips

:

  • If you prefer a sweeter muffin, you can add a bit more brown sugar or sweetener of your choice.
  • Feel free to swap applesauce for grated carrots or other fruits to customize the flavor.
  • These muffins store well for a few days in an airtight container or freeze them for longer storage.
