Cheesy Spinach Frittata

Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 tablespoon olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme or Italian seasoning (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch round baking dish or oven-safe skillet with olive oil or butter.
  2. Sauté the Vegetables: In a medium skillet, heat the olive oil or butter over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes. Add the chopped spinach and cook for another 2 minutes until wilted. Set aside to cool slightly.
  3. Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, mozzarella, Parmesan cheese, salt, pepper, and thyme (if using).
  4. Combine the Ingredients: Add the cooked spinach and onion mixture to the egg mixture and stir to combine.
  5. Bake the Frittata: Pour the mixture into the prepared baking dish. Bake for 20-25 minutes, or until the frittata is set in the middle and slightly golden on top.
  6. Serve: Let the frittata cool for a few minutes before slicing. Serve warm or at room temperature for a delicious breakfast, brunch, or dinner.
