CHEESY CHICKEN FRITTERS

Ingredients:

  • 2 cups cooked chicken, shredded or chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh herbs (optional, like parsley or dill) for garnish
  • Oil for frying

Method:

  1. Prepare the Chicken Mixture:
    • In a large bowl, combine the shredded chicken, cheese, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly incorporated.
  2. Form the Fritters:
    • Using your hands, form the chicken mixture into small patties or fritters. Coat each fritter lightly in breadcrumbs for an extra crispy texture.
  3. Fry the Fritters:
    • Heat oil in a frying pan over medium heat. Once hot, add the fritters and cook for 3-4 minutes on each side, or until golden brown and crispy.
  4. Serve:
    • Once cooked, remove the fritters from the pan and place them on a paper towel to drain excess oil.
    • Garnish with fresh herbs if desired and serve with a dipping sauce of your choice.

Tips:

  • For a healthier version, you can bake the fritters at 375°F (190°C) for about 20 minutes or until golden brown.
  • You can add vegetables like finely chopped spinach or bell peppers to the mixture for added flavor and texture.
