Ingredients:
- 2 cups cooked chicken, shredded or chopped
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup breadcrumbs (plus extra for coating)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh herbs (optional, like parsley or dill) for garnish
- Oil for frying
Method:
- Prepare the Chicken Mixture:
- In a large bowl, combine the shredded chicken, cheese, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly incorporated.
- Form the Fritters:
- Using your hands, form the chicken mixture into small patties or fritters. Coat each fritter lightly in breadcrumbs for an extra crispy texture.
- Fry the Fritters:
- Heat oil in a frying pan over medium heat. Once hot, add the fritters and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Once cooked, remove the fritters from the pan and place them on a paper towel to drain excess oil.
- Garnish with fresh herbs if desired and serve with a dipping sauce of your choice.
Tips:
- For a healthier version, you can bake the fritters at 375°F (190°C) for about 20 minutes or until golden brown.
- You can add vegetables like finely chopped spinach or bell peppers to the mixture for added flavor and texture.
