Crispy roasted potatoes combined with sweet, golden caramelized onions—simple and very flavorful.
Ingredients
- 4 medium potatoes, peeled and cut into cubes
- 2 large onions, thinly sliced
- 3 tbsp olive oil or vegetable oil
- 2 cloves garlic, minced (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme or rosemary (optional)
Instructions
1. Preheat the oven
- Preheat oven to 400°F (200°C).
2. Prepare the potatoes
- Place the cubed potatoes in a bowl.
- Toss with 2 tbsp oil, salt, pepper, paprika, and herbs.
3. Start roasting
- Spread the potatoes on a baking tray in a single layer.
- Roast for 20 minutes.
4. Add onions
- Toss sliced onions with 1 tbsp oil and garlic.
- Add them to the tray with the potatoes and mix gently.
5. Continue roasting
- Roast another 20–25 minutes, stirring once halfway, until potatoes are golden and crispy and onions are soft and caramelized.
Serving
Serve hot as a side dish with:

💡 Tip: For extra crispiness, soak the potato cubes in cold water for 15 minutes, then dry well before roasting.
