Roasted Potatoes with Caramelized Onions

Crispy roasted potatoes combined with sweet, golden caramelized onions—simple and very flavorful.

Ingredients

  • 4 medium potatoes, peeled and cut into cubes
  • 2 large onions, thinly sliced
  • 3 tbsp olive oil or vegetable oil
  • 2 cloves garlic, minced (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried thyme or rosemary (optional)

Instructions

1. Preheat the oven

  • Preheat oven to 400°F (200°C).

2. Prepare the potatoes

  • Place the cubed potatoes in a bowl.
  • Toss with 2 tbsp oil, salt, pepper, paprika, and herbs.

3. Start roasting

  • Spread the potatoes on a baking tray in a single layer.
  • Roast for 20 minutes.

4. Add onions

  • Toss sliced onions with 1 tbsp oil and garlic.
  • Add them to the tray with the potatoes and mix gently.

5. Continue roasting

  • Roast another 20–25 minutes, stirring once halfway, until potatoes are golden and crispy and onions are soft and caramelized.

Serving

Serve hot as a side dish with:

  • steak 🥩
  • eggs 🍳

💡 Tip: For extra crispiness, soak the potato cubes in cold water for 15 minutes, then dry well before roasting.
