Keto Brioche Bread

Ingredients

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 4 large eggs
  • ¼ cup melted butter (or coconut oil)
  • ¼ cup unsweetened almond milk
  • 2 tbsp erythritol (optional, for slight sweetness)
  • 1 tsp vanilla extract (optional, for brioche flavor)

🍞 Instructions

  1. Preheat oven
    • Set to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients
    • In a bowl, combine almond flour, coconut flour, baking powder, salt, and sweetener.
  3. Mix wet ingredients
    • In another bowl, whisk eggs, melted butter, almond milk, and vanilla.
  4. Combine
    • Slowly mix wet into dry until you get a thick batter.
  5. Bake
    • Pour into loaf pan and smooth the top.
    • Bake for 35–45 minutes until golden brown and firm.
  6. Cool completely
    • Let it cool before slicing (important for texture!).

💡 Tips

  • For extra “brioche” richness: add 1 tbsp cream cheese to the wet mix.
  • For a glossy top: brush with egg wash before baking.
  • Store in fridge—keto bread is more delicate than regular bread.
