3-ingredient lemon bars

Ingredients:

  • 1 box lemon cake mix
  • 1 can (about 400 g) sweetened condensed milk
  • 120 ml (½ cup) fresh lemon juice

👩‍🍳 Instructions:

  1. Preheat oven to 175°C (350°F).
  2. Make the crust & crumble:
    • Reserve about 1 cup of the dry cake mix.
    • Mix the rest of the cake mix with 1 egg and ½ cup melted butter (if your version truly uses only 3 ingredients, skip egg/butter and just press half the mix as-is—it’ll be more crumbly).
    • Press firmly into a greased baking dish to form the base.
  3. Prepare the filling:
    • In a bowl, whisk together the sweetened condensed milk and lemon juice until thick and smooth.
  4. Assemble:
    • Pour the lemon mixture over the crust.
    • Sprinkle the reserved cake mix on top as a crumble layer.
  5. Bake for 25–30 minutes until the top is lightly golden.
  6. Cool completely, then chill for at least 1 hour before cutting into squares.

✨ Tips:

  • Add lemon zest for extra zing.
  • Dust with powdered sugar before serving (optional but delicious).
  • Chill well—it helps the bars set perfectly.
