Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup beef broth or chicken broth
- 1/2 cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional)
Instructions
- Season the pork chops with salt, pepper, and paprika.
- Place the sliced onions in the bottom of a slow cooker.
- Arrange the pork chops on top of the onions.
- In a bowl, whisk together the broth, barbecue sauce, brown sugar, Worcestershire sauce, and garlic.
- Pour the mixture over the pork chops.
- Cover and cook:
- Low: 6–7 hours, or
- High: 3–4 hours
- When the pork chops are fork-tender, carefully remove them from the slow cooker.
- For a thicker sauce, mix the cornstarch and water into a slurry and stir it into the cooking liquid. Cook on High for 10–15 minutes until thickened.
- Return the pork chops to the sauce and spoon it over the top before serving.

Tips
- Bone-in pork chops stay more tender during slow cooking.
