Grandfather’s Tender Pork Chops: A Simple Spring Dinner Recipe

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth or chicken broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional)

Instructions

  1. Season the pork chops with salt, pepper, and paprika.
  2. Place the sliced onions in the bottom of a slow cooker.
  3. Arrange the pork chops on top of the onions.
  4. In a bowl, whisk together the broth, barbecue sauce, brown sugar, Worcestershire sauce, and garlic.
  5. Pour the mixture over the pork chops.
  6. Cover and cook:
    • Low: 6–7 hours, or
    • High: 3–4 hours
  7. When the pork chops are fork-tender, carefully remove them from the slow cooker.
  8. For a thicker sauce, mix the cornstarch and water into a slurry and stir it into the cooking liquid. Cook on High for 10–15 minutes until thickened.
  9. Return the pork chops to the sauce and spoon it over the top before serving.

Tips

  • Bone-in pork chops stay more tender during slow cooking.
  • For extra flavor, brown the chops in a skillet for 2–3 minutes per side before adding them to the slow cooker.
