Cheesy Zucchini: A Simple and Delicious Dish

🥒 Ingredients:

  • 4 medium zucchinis, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Chopped fresh parsley (for garnish, optional)

🔥 Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prep zucchini: Wash and slice the zucchini into rounds. Pat them dry with paper towels to remove excess moisture.
  3. Sauté briefly (optional for extra flavor):
    Heat olive oil in a large skillet over medium heat. Add zucchini slices and cook 2–3 minutes per side until lightly golden. Add garlic during the last minute of cooking.
  4. Transfer to baking dish:
    Place sautéed zucchini in a single layer in a 9×13-inch baking dish or sheet pan.
  5. Season and top:
    Sprinkle with salt, pepper, and Italian seasoning. Top evenly with mozzarella, then Parmesan.
  6. Bake for 10–12 minutes, or until cheese is melted and bubbly. For a golden top, broil for the last 1–2 minutes (watch closely!).
  7. Garnish and serve:
    Sprinkle with chopped parsley if desired. Serve hot!

  • Add sliced cherry tomatoes or mushrooms for extra flavor.
  • Use cheddar, Monterey Jack, or a cheese blend instead of mozzarella.
