- 2 cups cold mashed potatoes (leftovers work great)
- 2 large eggs
- 1 cup shredded cheddar cheese (or mix cheddar + mozzarella)
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 2 tablespoons chopped chives or green onions
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: bacon bits or diced cooked bacon for extra flavor
- Butter or nonstick spray (for greasing the muffin tin)

Instructions
:
- Preheat oven to 400°F (200°C). Grease a standard 12-cup muffin tin with butter or nonstick spray.
- In a large mixing bowl, combine:
- Mashed potatoes
- Eggs
- Cheddar cheese
- Parmesan
- Milk
- Chives/green onions
- Garlic powder
- Salt & pepper
- (Add bacon if using)
- Mix until everything is well combined.
- Spoon mixture evenly into muffin tin cups. Fill each about 3/4 full and gently press down to pack them.
- Bake for 20–25 minutes, or until tops are golden brown and slightly crispy.
- Let cool for a few minutes, then gently remove from the muffin tin using a spoon or butter knife.
