Cheesy Mashed Potato Puffs

Ingredients

:

  • 2 cups cold mashed potatoes (leftovers work great)
  • 2 large eggs
  • 1 cup shredded cheddar cheese (or mix cheddar + mozzarella)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: bacon bits or diced cooked bacon for extra flavor
  • Butter or nonstick spray (for greasing the muffin tin)

Instructions

:

  1. Preheat oven to 400°F (200°C). Grease a standard 12-cup muffin tin with butter or nonstick spray.
  2. In a large mixing bowl, combine:
    • Mashed potatoes
    • Eggs
    • Cheddar cheese
    • Parmesan
    • Milk
    • Chives/green onions
    • Garlic powder
    • Salt & pepper
    • (Add bacon if using)
  3. Mix until everything is well combined.
  4. Spoon mixture evenly into muffin tin cups. Fill each about 3/4 full and gently press down to pack them.
  5. Bake for 20–25 minutes, or until tops are golden brown and slightly crispy.
  6. Let cool for a few minutes, then gently remove from the muffin tin using a spoon or butter knife.
