Chicken Salad Croissants Recipe

Ingredients:

For the Chicken Salad:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • ½ cup mayonnaise (adjust to taste)
  • 1 teaspoon Dijon mustard (optional, for a tangy kick)
  • 1 stalk celery, finely diced
  • ¼ cup red grapes, halved (or use dried cranberries)
  • 2 tablespoons slivered almonds or chopped pecans (optional for crunch)
  • 1–2 teaspoons lemon juice
  • Salt and black pepper, to taste
  • Optional: 1 tablespoon chopped fresh parsley or green onions

For Serving:

  • 4–6 buttery croissants, sliced open
  • Optional: lettuce leaves or spring mix

🥣 Instructions:

1. 

Make the Chicken Salad

  • In a medium bowl, combine chicken, mayo, mustard (if using), celery, grapes, nuts, and lemon juice.
  • Mix well. Add salt and pepper to taste.
  • Stir in parsley or green onion if using.

Chill (Optional)

  • Cover and refrigerate for 30 minutes for flavors to blend. (Tastes better cold!)

3. 

Assemble the Croissants

  • Slice croissants open without cutting all the way through.
  • Add a leaf of lettuce if desired.
  • Spoon generous amounts of chicken salad into each croissant.

🍽 Tips & Variations:

  • Use Greek yogurt or a mix of mayo + yogurt for a lighter version.
  • Swap grapes for apple chunks or pineapple tidbits.
  • Add a touch of honey if you like it sweeter.
  • Want heat? Add a dash of hot sauce or chopped jalapeños.
