Ingredients:
- 2 large eggs
- 2 slices of good-quality bread (sourdough or whole grain works well)
- 1 ripe avocado
- 1 tsp lemon juice (optional)
- Salt and pepper to taste
- Red pepper flakes or chili flakes (optional)
- Olive oil (optional, for drizzling)
- Fresh herbs (optional – parsley, chives, or microgreens)
Instructions:
- Boil the Eggs:
- Bring a small pot of water to a boil.
- Gently lower the eggs into the water.
- Boil for 6½ minutes for a perfectly soft-boiled yolk.
- Immediately transfer eggs to an ice bath (or cold water) to stop cooking.
- After a couple of minutes, peel the eggs carefully.
- Toast the Bread:
- While eggs cook, toast the bread to your desired crispness.
- Prepare the Avocado:
- Scoop the avocado into a bowl.
- Mash with a fork until mostly smooth.
- Add lemon juice (optional), salt, and pepper to taste.
- Assemble:
- Spread mashed avocado onto the toasted bread.
- Cut the soft-boiled eggs in half and place them on top of the avocado.
- Season with extra salt, pepper, and a pinch of red pepper flakes if desired.
- Drizzle with a touch of olive oil and sprinkle fresh herbs on top if using.
Tips:
- Add sliced cherry tomatoes or radishes for extra color and crunch.
- For a heartier version, add a slice of smoked salmon or a sprinkle of feta cheese.
