Avocado Toast with Soft-Boiled Eggs

Ingredients:

  • 2 large eggs
  • 2 slices of good-quality bread (sourdough or whole grain works well)
  • 1 ripe avocado
  • 1 tsp lemon juice (optional)
  • Salt and pepper to taste
  • Red pepper flakes or chili flakes (optional)
  • Olive oil (optional, for drizzling)
  • Fresh herbs (optional – parsley, chives, or microgreens)

Instructions:

  1. Boil the Eggs:
    • Bring a small pot of water to a boil.
    • Gently lower the eggs into the water.
    • Boil for 6½ minutes for a perfectly soft-boiled yolk.
    • Immediately transfer eggs to an ice bath (or cold water) to stop cooking.
    • After a couple of minutes, peel the eggs carefully.
  2. Toast the Bread:
    • While eggs cook, toast the bread to your desired crispness.
  3. Prepare the Avocado:
    • Scoop the avocado into a bowl.
    • Mash with a fork until mostly smooth.
    • Add lemon juice (optional), salt, and pepper to taste.
  4. Assemble:
    • Spread mashed avocado onto the toasted bread.
    • Cut the soft-boiled eggs in half and place them on top of the avocado.
    • Season with extra salt, pepper, and a pinch of red pepper flakes if desired.
    • Drizzle with a touch of olive oil and sprinkle fresh herbs on top if using.

Tips:

  • Add sliced cherry tomatoes or radishes for extra color and crunch.
  • For a heartier version, add a slice of smoked salmon or a sprinkle of feta cheese.
