Slow Cooker Amish Honey Glazed Carrots

Ingredients:

  • 2 lbs carrots, peeled and sliced into 1/4-inch thick rounds
  • 1/4 cup unsalted butter, cut into small pieces
  • 1/4 cup honey
  • 1/4 cup brown sugar (light or dark)
  • 1/2 teaspoon cinnamon (optional, for extra flavor)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or thyme (optional, for garnish)

Instructions:

  1. Prepare the carrots:
    Peel the carrots and slice them into rounds, about 1/4 inch thick. You can also cut them into sticks if preferred.
  2. Layer the ingredients in the slow cooker:
    Place the sliced carrots in the slow cooker. Add the butter, honey, brown sugar, cinnamon (if using), salt, and pepper on top of the carrots.
  3. Cook the carrots:
    Cover and cook the carrots on low for about 4 to 5 hours or on high for 2 to 3 hours. Stir occasionally to make sure the carrots are evenly coated with the glaze.
  4. Finish and serve:
    Once the carrots are tender and glazed, taste and adjust the seasoning if needed. Optionally, sprinkle with fresh parsley or thyme for added color and flavor before serving.
