Ingredients
:
- 2 cups cooked chicken (shredded or finely chopped)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup breadcrumbs (plus more for coating)
- 2 large eggs
- 1/4 cup chopped green onions or parsley
- 1/4 cup grated Parmesan cheese (optional for extra flavor)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika (optional for a little kick)
- Salt and pepper to taste
- 1/2 cup all-purpose flour (for dredging)
- Oil (vegetable or olive oil) for frying
Instructions
:
- Prepare the Chicken:
- If you don’t have pre-cooked chicken, you can cook chicken breasts or thighs by boiling or pan-searing, then shredding or finely chopping the meat.
- Make the Fritter Mixture:
- In a large mixing bowl, combine the shredded chicken, shredded cheddar cheese, breadcrumbs, eggs, chopped green onions (or parsley), garlic powder, onion powder, paprika, Parmesan cheese (if using), salt, and pepper.
- Mix well until all ingredients are evenly combined. The mixture should be moist but not too runny. If it’s too wet, you can add a little more breadcrumbs or a small amount of flour.
- Form the Fritters:
- Use your hands or a spoon to form the chicken mixture into small patties or fritters, about 1-2 inches in diameter. Coat each fritter lightly in flour, pressing gently to ensure they hold their shape.
- Fry the Fritters:
- Heat about 2 tablespoons of oil in a large frying pan over medium-high heat.
- Once the oil is hot, carefully add the fritters to the pan. Do not overcrowd the pan; cook in batches if necessary.
- Fry for about 3-4 minutes per side, or until golden brown and crispy. Be careful not to burn them—adjust the heat as needed.
- Drain Excess Oil:
- Once the fritters are crispy and golden brown, remove them from the pan and place them on a paper towel-lined plate to drain any excess oil.
- Serve:
- Serve the fritters hot with your favorite dipping sauce, such as ranch, honey mustard, or a spicy mayo. Garnish with fresh parsley or additional green onions if desired.
Tips
:
- Variations: You can add different cheese varieties like mozzarella or Monterey Jack, or even throw in some finely chopped bell peppers for extra flavor.
- For extra crispiness: Dip the fritters in flour and then in beaten egg, followed by a coat of breadcrumbs for an extra crunchy exterior.
- Make ahead: You can prep the fritter mixture ahead of time and store it in the fridge for up to 24 hours before frying.
