Cheesy Chicken Fritters

Ingredients

:

  • 2 cups cooked chicken (shredded or finely chopped)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup breadcrumbs (plus more for coating)
  • 2 large eggs
  • 1/4 cup chopped green onions or parsley
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika (optional for a little kick)
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour (for dredging)
  • Oil (vegetable or olive oil) for frying

Instructions

  1. Prepare the Chicken:
    • If you don’t have pre-cooked chicken, you can cook chicken breasts or thighs by boiling or pan-searing, then shredding or finely chopping the meat.
  2. Make the Fritter Mixture:
    • In a large mixing bowl, combine the shredded chicken, shredded cheddar cheese, breadcrumbs, eggs, chopped green onions (or parsley), garlic powder, onion powder, paprika, Parmesan cheese (if using), salt, and pepper.
    • Mix well until all ingredients are evenly combined. The mixture should be moist but not too runny. If it’s too wet, you can add a little more breadcrumbs or a small amount of flour.
  3. Form the Fritters:
    • Use your hands or a spoon to form the chicken mixture into small patties or fritters, about 1-2 inches in diameter. Coat each fritter lightly in flour, pressing gently to ensure they hold their shape.
  4. Fry the Fritters:
    • Heat about 2 tablespoons of oil in a large frying pan over medium-high heat.
    • Once the oil is hot, carefully add the fritters to the pan. Do not overcrowd the pan; cook in batches if necessary.
    • Fry for about 3-4 minutes per side, or until golden brown and crispy. Be careful not to burn them—adjust the heat as needed.
  5. Drain Excess Oil:
    • Once the fritters are crispy and golden brown, remove them from the pan and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve:
    • Serve the fritters hot with your favorite dipping sauce, such as ranch, honey mustard, or a spicy mayo. Garnish with fresh parsley or additional green onions if desired.

  • Variations: You can add different cheese varieties like mozzarella or Monterey Jack, or even throw in some finely chopped bell peppers for extra flavor.
  • For extra crispiness: Dip the fritters in flour and then in beaten egg, followed by a coat of breadcrumbs for an extra crunchy exterior.
  • Make ahead: You can prep the fritter mixture ahead of time and store it in the fridge for up to 24 hours before frying.
