Ingredients:

For the Bread Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm water (110°F / 45°C)
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup olive oil (or melted butter)
  • 1/2 cup plain yogurt (or milk for a richer flavor)
  • 1 egg (optional, for richness)

For the Cheese Filling:

  • 1 cup shredded mozzarella cheese (or any cheese you prefer)
  • 1/2 cup crumbled feta cheese (optional for extra flavor)
  • 1/4 cup grated Parmesan cheese (optional for a savory boost)
  • Fresh herbs (optional, like parsley or chives) for added flavor

Instructions:

1. 

Prepare the Dough

:

  • In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until it becomes frothy. This step activates the yeast.
  • In a large bowl, mix the flour and salt.
  • Add the yeast mixture, olive oil (or melted butter), and yogurt (or milk) into the flour mixture. You can also add an egg at this stage for a richer dough.
  • Stir everything together to form a dough. Knead the dough for about 5-7 minutes until smooth and elastic. If it feels too sticky, add a little more flour.
  • Once kneaded, cover the dough with a clean cloth or plastic wrap and let it rise in a warm place for about 1 hour or until it doubles in size.

Prepare the Cheese Filling

:

  • While the dough is rising, mix the mozzarella cheese, feta cheese (if using), Parmesan cheese, and any fresh herbs you’d like to add in a small bowl. Set aside.

Shape the Bread

:

  • Once the dough has risen, punch it down to release any air bubbles. Divide it into 6 equal portions (or more, depending on the size of bread you want).
  • Roll each portion into a ball and then flatten it out into a round disk about 1/4-inch thick.
  • Spoon a generous amount of the cheese mixture into the center of each dough round. Fold the edges of the dough over the filling to seal it, creating a stuffed dough ball.
  • Flatten the dough ball gently with your hands and then roll it out again into a round shape, making sure the cheese doesn’t spill out. Repeat with the remaining portions.

Cook the Cheese Bread

:

  • Heat a large skillet or griddle over medium-high heat. You can also lightly brush the pan with olive oil or butter for extra flavor.
  • Place the rolled-out dough on the hot skillet and cook for about 2-3 minutes on each side, until golden brown and puffed up. You’ll know it’s ready when you see bubbles forming on the surface. Flip it over and cook the other side.
  • Press the edges of the bread lightly with a spatula to ensure even cooking and to help it puff up.

Serve

:

  • Remove the bread from the skillet and place it on a paper towel-lined plate to absorb any excess oil.
  • Serve warm! These cheesy breads can be enjoyed as a snack, appetizer, or a side dish with soups, stews, or curries.

Optional Toppings:

  • Garlic Butter: Brush the bread with melted garlic butter as soon as it comes off the skillet for an extra burst of flavor.
  • Herbs: Sprinkle fresh herbs like parsley or cilantro on top for a fresh, herby finish.
