Sweet Potato Rocambole with Minced Meat

Ingredients:

For the Sweet Potato Layer:

  • 2 large sweet potatoes (peeled and cut into chunks)
  • 2 tablespoons olive oil or butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg (optional, to help with binding)

For the Meat Filling:

  • 1 lb (450g) minced beef or pork (or a mix)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese (mozzarella or cheddar)
  • Fresh herbs (parsley or cilantro) for garnish (optional)

For the Topping:

  • 1/2 cup shredded cheese (mozzarella or a cheese of your choice)
  • Chopped green onions or herbs for garnish

Instructions:

Prepare the Sweet Potato Layer

:

  • Boil or steam the sweet potatoes until tender (about 15-20 minutes).
  • Drain and mash them well until smooth. Add olive oil (or butter), garlic powder, salt, pepper, and grated Parmesan. Mix well. If you want a firmer texture, you can add an egg to the mashed sweet potatoes.
  • Set the mashed sweet potatoes aside to cool slightly. This will form the base of your roll.

  • In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened and fragrant (about 3-5 minutes).

  • Season with cumin, paprika, salt, and pepper.
  • Once the meat is fully cooked, remove from heat and let it cool slightly. Stir in the grated cheese (mozzarella or cheddar) and fresh herbs if desired. Set aside.

Assemble the Rocambole

  • Preheat the oven to 375°F (190°C).
  • Lay a large sheet of parchment paper on a flat surface. Spread the mashed sweet potato mixture evenly over the parchment paper in a rectangle, about 1/2 inch thick.
  • Spoon the meat mixture onto the sweet potato layer, spreading it out evenly, leaving about 1 inch of space around the edges.
  • Carefully roll up the sweet potato and meat layer into a tight roll (like a roulade), using the parchment paper to help guide the rolling. Make sure the ends are tucked in.
  • Transfer the rolled-up rocambole onto a baking sheet lined with parchment paper.

Bake the Rocambole

:

  • Sprinkle the top of the rolled rocambole with shredded cheese.
  • Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the cheese has melted.
  • If you want a crispier crust, you can broil it for 2-3 minutes at the end.
