Crispy Baked Onion Rings

Ingredients:

  • 2 large onions (yellow or white)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil spray (or your preferred cooking spray)

Instructions:

  1. Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the onions: Peel the onions and slice them into 1/4-inch thick rings. Separate the rings carefully, discarding any small inner pieces.
  3. Prepare the coating stations:
    • In a shallow bowl, place the flour.
    • In another shallow bowl, whisk the eggs.
    • In a third shallow bowl, mix the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. Coat the onion rings:
    • Dip each onion ring first into the flour, then into the egg wash, and finally into the breadcrumb mixture, pressing gently to ensure an even coating.
    • Place the coated onion rings on the prepared baking sheet, making sure they are spaced evenly.
  5. Bake the onion rings:
    • Lightly spray the tops of the onion rings with olive oil to help them crisp up.
    • Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
  6. Serve and enjoy:
    • Let the onion rings cool slightly before serving. Enjoy them as a side with your favorite dipping sauce, or as a snack!
