Classic Shortbread Cookies

Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar
  • 2 cups (240g) all-purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Dough:
    In a large bowl, cream together the softened butter and powdered sugar until smooth and creamy. Add the vanilla extract and mix well.
  2. Add the Dry Ingredients:
    Gradually mix in the flour and salt until combined. The dough will be a bit crumbly but should hold together when pressed.
  3. Roll Out the Dough:
    On a lightly floured surface, roll the dough to about 1/4-inch thickness. You can also roll it out between two sheets of parchment paper to avoid extra flour.
  4. Cut the Cookies:
    Use a round cookie cutter to cut out circles. You can also use a glass or any circular shape. Arrange the dough circles on a parchment-lined baking sheet.
  5. Decorate the Cookies:
    Using a fork, gently press a pattern onto the surface of each cookie for a traditional shortbread look.
  6. Bake:
    Preheat the oven to 350°F (175°C). Bake the cookies for 10-12 minutes, or until the edges are just beginning to turn golden.
  7. Cool and Serve:
    Remove from the oven and allow the cookies to cool completely on a wire rack. Enjoy your homemade shortbread cookies with a cup of tea or coffee!

Optional Variations:

  • Add a pinch of cinnamon or almond extract for extra flavor.
  • For a sweet touch, sprinkle some granulated sugar on top before baking.
