- 2 cups mashed boiled potatoes
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped bell peppers (red and green)
- 1-2 green chilies, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon ginger-garlic paste
- 1/2 teaspoon garam masala
- Salt to taste
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/2 cup chickpea flour (besan)
- Water (as needed)
- Oil for frying
Instructions:
- Prepare the potato mixture: In a large bowl, mash the boiled potatoes. Add chopped onions, bell peppers, green chilies, cilantro, and the cumin seeds.
- Season the mixture: Add ginger-garlic paste, garam masala, red chili powder, turmeric powder, and salt to the mashed potatoes. Mix well until all ingredients are combined evenly.
- Bind with flour: Gradually add chickpea flour to the potato mixture, mixing it in. Add water little by little until the mixture holds together but is not too wet. The consistency should be thick enough to form small balls or patties.
- Shape the fritters: Take small portions of the mixture and shape them into small round balls or flattened patties.
- Heat oil: Heat oil in a pan for frying. Test the oil by dropping a small amount of the batter in it. If it sizzles immediately, the oil is ready.
- Fry the fritters: Fry the potato fritters in batches, turning them occasionally until they are golden brown and crisp on all sides.
- Serve: Remove the fritters from the oil and place them on a paper towel to drain excess oil. Serve hot with chutney or your favorite dipping sauce.
