Korean-Style Grated Carrot Salad (Morkovcha)

Ingredients:

  • 4 large carrots (peeled and grated)
  • 1 onion (finely chopped)
  • 2-3 garlic cloves (minced)
  • 1-2 tablespoons sesame oil
  • 1-2 tablespoons vegetable oil (or canola oil)
  • 1 tablespoon rice vinegar (or white vinegar)
  • 1-2 tablespoons sugar (adjust to taste)
  • 1-2 tablespoons soy sauce
  • 1 teaspoon salt (to taste)
  • 1 teaspoon ground black pepper
  • 1-2 teaspoons Korean red pepper flakes (gochugaru) or cayenne pepper (adjust based on spice preference)
  • 1 teaspoon ground coriander (optional)
  • 2-3 tablespoons chopped fresh cilantro (or parsley)
  • 1-2 teaspoons sesame seeds (optional, for garnish)

Instructions:

Prepare the Carrots:

  • Peel and grate the carrots into long, thin strips using a box grater or a food processor.
  • Place the grated carrots into a large mixing bowl.

Prepare the Dressing:

  • In a separate bowl, mix together the sesame oil, vegetable oil, rice vinegar, soy sauce, sugar, salt, black pepper, Korean red pepper flakes (gochugaru), and ground coriander (if using).
  • Stir well to dissolve the sugar and combine the flavors.

Combine the Carrots and Dressing:

  • Pour the dressing over the grated carrots and mix well.
  • Add the finely chopped onion and minced garlic to the bowl, and mix everything together to ensure the carrots are evenly coated in the dressing.

Let the Salad Marinate:

  • Cover the bowl and refrigerate the salad for at least 1-2 hours. This allows the flavors to meld and the carrots to soften slightly.
  • If you prefer a more intense flavor, let the salad marinate for longer (up to 24 hours).

Finish and Serve:

  • Before serving, give the salad a good stir. Garnish with fresh chopped cilantro (or parsley) and sesame seeds if desired.
  • Serve cold as a side dish or on its own!

Notes:

  • For a richer taste, you can add a bit of toasted sesame seeds or even a dash of chili oil for extra spice and flavor.
  • Adjust the sweetness and spice level to your liking. If you like it sweeter, add more sugar; for more heat, increase the amount of gochugaru or cayenne pepper.
