Shrimp and Cod in Creamy Garlic Sauce

Ingredients:

  • 1 lb cod fillets (cut into pieces)
  • 1/2 lb shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon butter (optional, for extra richness)

Instructions:

  1. Cook the Fish and Shrimp: In a large skillet, heat olive oil over medium heat. Season the cod fillets with salt, pepper, and thyme. Place the cod pieces in the pan and cook for 3-4 minutes on each side, until golden and cooked through. Remove the cod from the skillet and set aside. In the same pan, cook the shrimp for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp and set aside with the cod.
  2. Make the Creamy Garlic Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the chicken broth, heavy cream, and lemon juice. Stir and bring the mixture to a gentle simmer. Allow it to cook for 2-3 minutes until the sauce thickens slightly.
  3. Combine the Seafood: Return the cod and shrimp to the skillet, gently stirring to coat them in the creamy sauce. Let everything simmer together for another 2-3 minutes to combine the flavors.
  4. Finish and Serve: Stir in the butter (if using) for extra richness, then garnish with fresh parsley. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
  5. Serve: Serve the shrimp and cod in creamy garlic sauce over rice, pasta, or with crusty bread to soak up the sauce.
