Quick & Easy Old Fashioned Rice Pudding in 30 Minutes

Ingredients:

  • 1 cup cooked rice (preferably short grain or leftover rice)
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 egg (beaten)
  • 1/4 teaspoon ground cinnamon (optional, for topping)
  • 1/4 cup raisins (optional)

Instructions:

  1. Combine Milk and Sugar: In a medium saucepan, combine the cooked rice, milk, sugar, and salt. Stir well to combine and bring to a simmer over medium heat, stirring occasionally.
  2. Add the Egg: In a small bowl, beat the egg. Once the rice mixture is simmering, slowly add the beaten egg while constantly stirring to prevent curdling. Cook for 2-3 minutes until it thickens slightly.
  3. Flavor the Pudding: Stir in the vanilla extract and cinnamon (if using). Continue cooking and stirring for another 5-7 minutes until the pudding thickens to a custard-like consistency.
  4. Serve: Pour the rice pudding into individual serving bowls or ramekins. Let it cool for a few minutes before serving. Optionally, sprinkle cinnamon on top and add raisins for extra flavor.
  5. Enjoy: Serve warm or chilled, depending on your preference!
