Ingredients:
- 1 cup cooked rice (preferably short grain or leftover rice)
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 egg (beaten)
- 1/4 teaspoon ground cinnamon (optional, for topping)
- 1/4 cup raisins (optional)
Instructions:
- Combine Milk and Sugar: In a medium saucepan, combine the cooked rice, milk, sugar, and salt. Stir well to combine and bring to a simmer over medium heat, stirring occasionally.
- Add the Egg: In a small bowl, beat the egg. Once the rice mixture is simmering, slowly add the beaten egg while constantly stirring to prevent curdling. Cook for 2-3 minutes until it thickens slightly.
- Flavor the Pudding: Stir in the vanilla extract and cinnamon (if using). Continue cooking and stirring for another 5-7 minutes until the pudding thickens to a custard-like consistency.
- Serve: Pour the rice pudding into individual serving bowls or ramekins. Let it cool for a few minutes before serving. Optionally, sprinkle cinnamon on top and add raisins for extra flavor.
