Ingredients
- 6 slices white or brioche bread, crusts removed
- 4 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tbsp sugar
- 1/2 tsp cinnamon
- 2 tbsp butter, melted
- 1/4 cup sugar (for coating)
- 1 tsp cinnamon (for coating)
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- Flatten the bread slices with a rolling pin and press each slice into the muffin cups to form a bowl.
- In a bowl, whisk together eggs, milk, vanilla, sugar, and cinnamon.
- Pour the mixture into each bread cup and crack a small amount of egg mixture in the center if desired for the “egg look”.
- Bake for 18–22 minutes until golden and set.
- Mix 1/4 cup sugar with cinnamon in a bowl.
- Brush the baked muffins lightly with melted butter, then roll or sprinkle with the cinnamon sugar mixture.
Optional Serving
Serve with:
- Crispy bacon
- Maple syrup
- Fresh fruit
