Delicious Chicken Pot Pie

Ingredients

  • 6 slices white or brioche bread, crusts removed
  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • 2 tbsp butter, melted
  • 1/4 cup sugar (for coating)
  • 1 tsp cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Flatten the bread slices with a rolling pin and press each slice into the muffin cups to form a bowl.
  3. In a bowl, whisk together eggs, milk, vanilla, sugar, and cinnamon.
  4. Pour the mixture into each bread cup and crack a small amount of egg mixture in the center if desired for the “egg look”.
  5. Bake for 18–22 minutes until golden and set.
  6. Mix 1/4 cup sugar with cinnamon in a bowl.
  7. Brush the baked muffins lightly with melted butter, then roll or sprinkle with the cinnamon sugar mixture.

Optional Serving

Serve with:

  • Crispy bacon
  • Maple syrup
  • Fresh fruit
