Ingredients:
- 300–400 g ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 cup broccoli florets
- 1 zucchini, chopped
- 1 celery stalk, chopped
- 1 can (400 g) diced tomatoes (optional)
- 5–6 cups beef or vegetable broth
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Salt to taste
- 1 teaspoon dried oregano or thyme
- Fresh parsley (for garnish)

- Cook the beef
In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Break it up as it cooks. Drain excess fat if needed. - Add aromatics
Stir in onion and garlic. Cook for 2–3 minutes until fragrant and softened. - Add vegetables
Add carrots, celery, potatoes, zucchini, and broccoli. Stir well. - Pour in broth
Add broth and diced tomatoes (if using). Bring to a boil. - Season & simmer
Add paprika, pepper, salt, and herbs. Reduce heat and let simmer for 20–30 minutes, until vegetables are tender. - Taste & adjust
Adjust seasoning if needed. - Serve
Garnish with fresh parsley and enjoy warm.
