Hearty Vegetable and Ground Beef Soup

Ingredients:

  • 300–400 g ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 cup broccoli florets
  • 1 zucchini, chopped
  • 1 celery stalk, chopped
  • 1 can (400 g) diced tomatoes (optional)
  • 5–6 cups beef or vegetable broth
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 teaspoon dried oregano or thyme
  • Fresh parsley (for garnish)

👩‍🍳 Instructions:

  1. Cook the beef
    In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Break it up as it cooks. Drain excess fat if needed.
  2. Add aromatics
    Stir in onion and garlic. Cook for 2–3 minutes until fragrant and softened.
  3. Add vegetables
    Add carrots, celery, potatoes, zucchini, and broccoli. Stir well.
  4. Pour in broth
    Add broth and diced tomatoes (if using). Bring to a boil.
  5. Season & simmer
    Add paprika, pepper, salt, and herbs. Reduce heat and let simmer for 20–30 minutes, until vegetables are tender.
  6. Taste & adjust
    Adjust seasoning if needed.
  7. Serve
    Garnish with fresh parsley and enjoy warm.

💡 Tips:

  • Add pasta or rice for extra heartiness.
  • For a lighter version, swap beef with ground turkey.
  • A squeeze of lemon at the end brightens the flavor.
