Ingredients:
- 2 cups shredded coconut (unsweetened or sweetened)
- 1 can (400g) sweetened condensed milk
- 2 large eggs
- 1 teaspoon vanilla extract (optional but recommended)
Instructions:
- Preheat oven to 180°C (350°F).
Line a baking dish (about 20×20 cm / 8×8 inch) with foil or parchment. - Mix everything
In a bowl, combine coconut, condensed milk, eggs, and vanilla. Stir until fully combined. - Pour & spread
Pour the mixture into the prepared pan and spread evenly. - Bake
Bake for 25–30 minutes, or until the top is golden brown and slightly crisp. - Cool & cut
Let it cool slightly, then cut into squares.
Tips:
- For extra richness, brush the top with a little butter before baking.
- Want it crispier? Bake a few minutes longer until deeply golden.
- You can add a pinch of salt to balance the sweetness.
