My kids devour an entire batch of these the second they come out of the oven. I can’t believe it only takes 4 ingredients.

Ingredients:

  • 2 cups shredded coconut (unsweetened or sweetened)
  • 1 can (400g) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional but recommended)

Instructions:

  1. Preheat oven to 180°C (350°F).
    Line a baking dish (about 20×20 cm / 8×8 inch) with foil or parchment.
  2. Mix everything
    In a bowl, combine coconut, condensed milk, eggs, and vanilla. Stir until fully combined.
  3. Pour & spread
    Pour the mixture into the prepared pan and spread evenly.
  4. Bake
    Bake for 25–30 minutes, or until the top is golden brown and slightly crisp.
  5. Cool & cut
    Let it cool slightly, then cut into squares.

Tips:

  • For extra richness, brush the top with a little butter before baking.
  • Want it crispier? Bake a few minutes longer until deeply golden.
  • You can add a pinch of salt to balance the sweetness.
