baked milk custard

Ingredients

  • 4 large eggs
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 cups whole milk
  • Ground nutmeg or cinnamon, for topping

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Warm the milk slightly until just lukewarm. Do not boil.
  3. In a large bowl, whisk together eggs, sugar, salt, and vanilla.
  4. Slowly pour in the warm milk while whisking continuously.
  5. Strain the mixture for an extra smooth custard if desired.
  6. Pour into baking dishes or foil pans.
  7. Sprinkle lightly with nutmeg or cinnamon.
  8. Place pans in a larger baking tray and add hot water halfway up the sides (water bath).
  9. Bake for 45–55 minutes, or until the center is just set.
  10. Cool slightly before serving warm or chilled.

Tips

  • For a richer custard, replace 1 cup of milk with heavy cream.
  • Avoid overbaking to keep the texture silky and smooth.
  • Serve with fresh berries or caramel sauce if desired.
