Ingredients

  • 4 medium russet potatoes (or Yukon Golds), scrubbed
  • 3 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika (optional, for a little color and flavor)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese (preferably freshly grated)
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cut potatoes into thin fries or wedges, about ¼-inch thick. Try to keep them uniform for even baking.
  3. Soak the potatoes in cold water for 20–30 minutes (optional but recommended for extra crispiness). Then drain and pat completely dry with a towel.
  4. In a large bowl, toss the fries with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  5. Add the Parmesan cheese and toss again so the cheese sticks to the fries.
  6. Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding.
  7. Bake for 30–35 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the oven and sprinkle with parsley if using. Add extra Parmesan on top if you like!
