Best Southern Fried Chicken

Ingredients:

  • 4 chicken legs (or 8-10 pieces of your favorite cuts like thighs, wings, or breasts)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional for a bit of heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon baking powder
  • 1 cup buttermilk (for soaking)
  • 2 eggs
  • Vegetable oil for frying (or peanut oil for the best taste)
  • 1 tablespoon hot sauce (optional, for a little extra kick)

Instructions:

  1. Prep the Chicken:
    • Pat the chicken pieces dry with paper towels. This helps the breading stick better.
    • In a shallow bowl, whisk together the buttermilk, eggs, and hot sauce (if using). Soak the chicken pieces in this mixture for at least 1 hour, or overnight in the refrigerator if you want the chicken to be extra flavorful.
  2. Make the Breading:
    • In a large bowl or a shallow dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, pepper, and baking powder. Stir everything together to ensure it’s evenly mixed.
  3. Coat the Chicken:
    • Take each chicken piece from the buttermilk mixture and dredge it in the flour mixture. Press the flour onto the chicken to coat it thoroughly, then set it aside on a plate or baking sheet.
  4. Fry the Chicken:
    • Heat about 2 inches of vegetable oil in a large skillet or Dutch oven over medium-high heat. The oil should reach 350°F (175°C). You can check the temperature with a thermometer, or drop a small amount of flour into the oil – if it sizzles, the oil is ready.
    • Carefully add the chicken pieces to the hot oil, being sure not to overcrowd the pan. Fry the chicken in batches if necessary.
    • Cook the chicken for about 12-15 minutes on each side, or until golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C) when checked with a meat thermometer.
  5. Drain the Chicken:
    • Once the chicken is crispy and golden, use tongs to remove it from the oil. Let it drain on a paper towel-lined plate or a wire rack.
  6. Serve:
    • Serve the Southern fried chicken hot with your favorite sides, such as mashed potatoes, cornbread, or coleslaw.

Enjoy your homemade Best Southern Fried Chicken! It’s crispy on the outside, juicy on the inside, and packed with flavor. Perfect for family dinners or a special treat!
