Canadian Cheese Soup

A rich, creamy, and comforting soup loaded with sharp cheddar cheese, vegetables, and savory flavor—perfect for chilly days.

Ingredients

  • 4 tbsp butter
  • 1 small onion, finely chopped
  • 2 carrots, grated
  • 2 celery stalks, finely diced
  • ¼ cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups potatoes, peeled and diced
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, freshly grated
  • ½ tsp dried thyme
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 4 slices bacon, cooked and crumbled (optional)
  • Chopped parsley or green onions for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, carrots, and celery. Sauté for 5–7 minutes until softened.
  3. Stir in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth until smooth.
  5. Add the diced potatoes, thyme, and paprika. Bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes, or until the potatoes are tender.
  7. Stir in the milk and heat gently without boiling.
  8. Add the grated cheddar cheese a handful at a time, stirring until melted and smooth.
  9. Season with salt and pepper to taste.
  10. Serve hot, topped with crumbled bacon and fresh parsley or green onions if desired.
