Cheesy Mashed Potato Muffins with eggs

Ingredients:

  • 2 cups mashed potatoes (use leftover mashed potatoes or freshly made)
  • 1 cup shredded cheese (cheddar or your favorite variety)
  • 2 large eggs
  • 1/2 cup chopped green onions (optional)
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup milk or heavy cream (for creaminess)
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or melted butter (for greasing muffin tin)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or melted butter to prevent sticking.
  2. Prepare the mashed potatoes:
    If you’re using leftover mashed potatoes, make sure they are smooth and creamy. If you’re making them fresh, boil about 3-4 medium-sized potatoes until tender, mash them with a little butter, milk, salt, and pepper.
  3. Mix the ingredients:
