Chocolate Zucchini Bread – Moist, Decadent, and Full of Flavor

Ingredients:

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C) and grease and line two loaf pans with parchment paper or lightly grease with cooking spray.
  2. Prepare the zucchini: Grate the zucchinis using a box grater or food processor. Squeeze out any excess moisture from the grated zucchini by placing it in a clean kitchen towel and wringing it out.
  3. Mix dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon (if using).
  4. Mix wet ingredients: In another bowl, whisk together the granulated sugar, brown sugar, oil (or melted butter), eggs, and vanilla extract until well combined.
  5. Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. The batter will be thick.
  6. Add zucchini and mix-ins: Gently fold in the grated zucchini, chocolate chips, and nuts if using. Stir until evenly distributed.
  7. Bake: Divide the batter evenly between the two prepared loaf pans. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
  8. Cool: Let the loaves cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
