Ingredients:
- 1 ½ lbs ground beef (80/20 is ideal for flavor and moisture)
- 1 cup breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 egg, beaten
- ½ cup milk
- 2 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme (optional)
For the Glaze:
- ⅓ cup ketchup
- 1 tbsp brown sugar
- 1 tsp mustard (yellow or Dijon)
- 1 tsp Worcestershire sauce
Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine all the meatloaf ingredients. Mix with hands or a spoon until just combined — don’t overmix.
- Shape the mixture into a loaf on a parchment-lined baking sheet or press into a loaf pan.
- Mix glaze ingredients in a small bowl. Spread half over the meatloaf.
- Bake for 40 minutes, then spread remaining glaze on top.
- Return to the oven and bake another 15–20 minutes, or until internal temp reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
🥔 Roasted Potatoes
Ingredients:
- 2 lbs baby potatoes (or Yukon Gold), halved or quartered
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary or thyme
- Salt and pepper, to taste
Instructions:
- While meatloaf bakes, toss potatoes with oil, garlic powder, herbs, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast in the oven (you can do this alongside the meatloaf) at 400°F (204°C) for 35–40 minutes, flipping halfway through, until golden and crispy.
