Classic Meatloaf with Roasted Potatoes

Ingredients:

  • 1 ½ lbs ground beef (80/20 is ideal for flavor and moisture)
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)

For the Glaze:

  • ⅓ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard (yellow or Dijon)
  • 1 tsp Worcestershire sauce

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine all the meatloaf ingredients. Mix with hands or a spoon until just combined — don’t overmix.
  3. Shape the mixture into a loaf on a parchment-lined baking sheet or press into a loaf pan.
  4. Mix glaze ingredients in a small bowl. Spread half over the meatloaf.
  5. Bake for 40 minutes, then spread remaining glaze on top.
  6. Return to the oven and bake another 15–20 minutes, or until internal temp reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing.

🥔 Roasted Potatoes

Ingredients:

  • 2 lbs baby potatoes (or Yukon Gold), halved or quartered
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme
  • Salt and pepper, to taste

Instructions:

  1. While meatloaf bakes, toss potatoes with oil, garlic powder, herbs, salt, and pepper.
  2. Spread on a baking sheet in a single layer.
  3. Roast in the oven (you can do this alongside the meatloaf) at 400°F (204°C) for 35–40 minutes, flipping halfway through, until golden and crispy.

🍽️ Serving Suggestions:

  • Serve with green beans, peas, or a crisp salad.
  • Drizzle extra meatloaf glaze or gravy over the top if desired.
