Crab Salad

Ingredients:

  • 1 lb crab meat (imitation crab or real crab, shredded)
  • 1 cup cooked and cooled pasta (such as shells or rotini)
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper (optional)
  • 1/2 cup shredded carrots
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Ingredients:
    • Shred or chop the crab meat into bite-sized pieces.
    • Cook the pasta according to the package directions, drain, and cool.
    • Finely chop the celery, red bell pepper, and carrots.
  2. Make the Dressing:
    • In a medium-sized bowl, mix together the mayonnaise, Dijon mustard (if using), lemon juice, salt, and pepper.
  3. Assemble the Salad:
    • In a large mixing bowl, combine the crab meat, cooked pasta, chopped vegetables, and fresh parsley.
    • Pour the dressing over the mixture and stir gently until everything is well coated.
  4. Chill and Serve:
    • Refrigerate the salad for at least an hour to allow the flavors to meld together.
    • Before serving, garnish with a little more fresh parsley if desired.
