Creamy Layered Delight: The Perfect No-Bake Biscuit Pudding Recipe

A no-fuss, no-bake treat with layers of biscuits, silky cream, and just the right touch of chocolate. Great for parties, holidays, or that late-night sweet craving.

🧂 Ingredients:

For the Biscuit Layers:

  • 2 packs of tea biscuits (Marie, Digestive, or graham crackers work well)
  • 1 cup milk (for dipping biscuits)
  • Optional: 1–2 tbsp coffee, cocoa, or vanilla extract added to the milk

For the Cream Layer:

  • 2 cups full-fat milk
  • ¼ cup sugar (adjust to taste)
  • 2 tbsp cornflour (cornstarch)
  • 1 tbsp all-purpose flour
  • 1 egg yolk (optional, adds richness)
  • 1 tsp vanilla extract
  • ½ cup whipped cream or 1 tbsp butter (for smoothness)
  • Optional: a pinch of salt

For the Chocolate Topping:

  • 100g dark or milk chocolate, chopped
  • ½ cup cream (heavy or whipping cream)

🛠️ Instructions:

1.

Make the Creamy Custard Layer

:

  • In a saucepan, mix cornflour, flour, sugar, and egg yolk (if using).
  • Gradually add milk, whisking to avoid lumps.
  • Cook over medium heat, stirring constantly, until thickened (like a smooth pudding).
  • Remove from heat, stir in vanilla and butter or whipped cream. Let it cool slightly.

2.

Layer the Pudding

:

  • Dip each biscuit quickly in milk (don’t soak), and layer at the bottom of your serving dish.
  • Spread a layer of the warm custard over the biscuits.
  • Repeat biscuit + custard layers until you run out. End with a custard layer on top.

3.

Make the Chocolate Ganache Topping

:

  • Heat cream just until it simmers, then pour over chopped chocolate.
  • Let sit 2 minutes, then stir until smooth.
  • Pour over the top custard layer and smooth out.

4.

Chill

:

  • Cover and refrigerate for at least 4 hours, ideally overnight, for best flavor and texture.

🍫 Optional Toppings:

  • Grated chocolate or cocoa powder
  • Crushed nuts (like pistachios or almonds)
  • Fresh berries
  • Shaved coconut
  • Biscuit crumbs

🍽️ Serving Tips:

  • Slice like a lasagna or scoop into bowls.
  • Serve chilled.
  • Keeps well in the fridge for 3–4 days.

💡 Variations:

  • Add a layer of banana slices or strawberries between the cream and biscuits.
  • Mix in instant coffee or cocoa powder into the cream for flavor twists.
  • Use flavored biscuits (chocolate, cinnamon, etc.) for variety.
