🍄 Ingredients:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2–3 garlic cloves, minced
  • 500g (1 lb) fresh mushrooms, sliced (cremini, button, or a mix)
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper, to taste
  • 2 tbsp all-purpose flour (for thickening)
  • 4 cups (1 liter) vegetable or chicken broth
  • 1 cup (240 ml) heavy cream (or half-and-half for a lighter version)
  • Optional: 2 tbsp dry white wine or sherry (adds depth)
  • Fresh parsley, chopped (for garnish)

🍳 Instructions:

  1. Sauté Aromatics:
    • In a large pot, heat butter and olive oil over medium heat.
    • Add onion and cook until translucent (about 4–5 minutes).
    • Stir in garlic and cook for 1 minute.
  2. Cook Mushrooms:
    • Add the sliced mushrooms and thyme.
    • Sauté until mushrooms are golden and most liquid has evaporated (8–10 minutes).
    • Season with salt and pepper.
  3. Add Flour:
    • Sprinkle in the flour, stirring well to coat the mushrooms.
    • Cook for 1–2 minutes to eliminate the raw flour taste.
  4. Deglaze & Simmer:
    • (Optional) Add the white wine and cook for 1–2 minutes until slightly reduced.
    • Slowly pour in the broth, stirring constantly.
    • Bring to a boil, then reduce heat and simmer for 10–15 minutes.
  5. Blend (Optional):
    • For a smooth soup, use an immersion blender or regular blender to purée.
    • For a chunkier texture, blend only half or skip blending.
  6. Add Cream:
    • Stir in the heavy cream.
    • Simmer for another 3–5 minutes, but do not boil after adding cream.
  7. Taste & Serve:
    • Adjust seasoning with more salt and pepper, if needed.
    • Garnish with fresh parsley.
