- 1 tbsp olive oil

- 500g (1 lb) fresh mushrooms, sliced (cremini, button, or a mix)
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper, to taste
- 2 tbsp all-purpose flour (for thickening)
- 4 cups (1 liter) vegetable or chicken broth
- 1 cup (240 ml) heavy cream (or half-and-half for a lighter version)
- Optional: 2 tbsp dry white wine or sherry (adds depth)
- Fresh parsley, chopped (for garnish)

- Sauté Aromatics:
