Crispy Potato Squares

Ingredients:

  • 4 medium-sized potatoes (peeled and grated)
  • 1/2 cup all-purpose flour (or chickpea flour for a gluten-free version)
  • 1/2 cup grated cheese (optional, can use cheddar or parmesan)
  • 2 tbsp chopped fresh parsley or cilantro
  • 1/4 tsp black pepper
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp paprika (optional)
  • 1/2 tsp garlic powder (optional)
  • 1 egg (for binding)
  • Oil for frying (vegetable oil or olive oil)

Instructions:

  1. Prepare the Potatoes:
    • Peel and grate the potatoes. To remove excess starch and moisture, place the grated potatoes in a clean kitchen towel and squeeze them dry.
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the grated potatoes, flour, grated cheese, chopped parsley, black pepper, salt, paprika, and garlic powder.
    • Crack the egg into the mixture and stir everything together until well combined.
  3. Shape the Squares:
    • Take small portions of the mixture and shape them into small squares or rectangles, pressing gently to ensure they hold together.
    • Lay the shaped squares on a plate or tray.
  4. Fry the Potato Squares:
    • Heat oil in a frying pan over medium heat.
    • Once the oil is hot, carefully add the potato squares, making sure not to overcrowd the pan.
    • Fry for about 3-4 minutes on each side or until golden brown and crispy.
    • Remove from the pan and place on paper towels to absorb any excess oil.
  5. Serve and Enjoy:
    • Serve these crispy potato squares hot as a snack or side dish. You can pair them with a dipping sauce of your choice, such as sour cream, ketchup, or a spicy mayo.
