Crispy Roasted Cauliflower

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika (or regular paprika)
  • ½ tsp ground turmeric (optional, for color and flavor)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1/4 cup grated Parmesan cheese for extra flavor
  • Optional dipping sauce: ranch, tahini, or a spicy sriracha mayo

Instructions:

1. 

Preheat the Oven:

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower:

  • Wash the cauliflower thoroughly and cut it into bite-sized florets, making sure they are relatively uniform in size for even cooking.

3. 

Season the Cauliflower:

  • In a large mixing bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, turmeric (if using), salt, and pepper. Make sure all the florets are evenly coated with the oil and seasonings.

Arrange on the Baking Sheet:

  • Spread the seasoned cauliflower evenly in a single layer on the prepared baking sheet. Make sure the florets are not crowded, as this can affect their crispiness.

Roast the Cauliflower:

  • Roast the cauliflower in the preheated oven for 25-30 minutes, flipping the florets halfway through the cooking time to ensure they cook evenly. The cauliflower should turn golden brown and become crispy on the edges.

6. 

Optional: Add Parmesan:

  • If using Parmesan cheese, sprinkle it over the cauliflower in the last 5 minutes of roasting for a cheesy, golden finish.

Garnish and Serve:

  • Once the cauliflower is crispy and tender, remove it from the oven and garnish with fresh parsley. Serve immediately with your favorite dipping sauce.

Tips:

  • Flavor Variations: You can add other seasonings to suit your taste. Try adding chili powder for some heat, or nutritional yeast for a cheesy, dairy-free flavor.
  • Crispier Texture: For extra crispiness, you can toss the cauliflower in a little cornstarch before roasting.
  • Serving Ideas: Serve as a snack with dipping sauce, or as a side dish to complement your favorite main course.
