Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/3 cup cooked bacon or ham, diced
- 1/4 cup green onions, chopped
- 1/4 cup bell pepper, diced
- Salt and black pepper to taste
- Cooking spray or a little oil
Instructions
- Preheat oven to 180°C / 350°F.
- Grease a muffin tin with cooking spray or oil.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Add cheese, bacon/ham, green onions, and bell peppers into the muffin cups.
- Pour the egg mixture evenly into each cup (about 3/4 full).
- Bake for 18–22 minutes until the eggs are set and lightly golden.
- Let cool for a few minutes, then remove and serve.
Tips
- Add spinach, mushrooms, or tomatoes for extra flavor.
- Store in the fridge up to 4 days and reheat in the microwave.
