Easy Breakfast Egg Muffins 

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/3 cup cooked bacon or ham, diced
  • 1/4 cup green onions, chopped
  • 1/4 cup bell pepper, diced
  • Salt and black pepper to taste
  • Cooking spray or a little oil

Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Grease a muffin tin with cooking spray or oil.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Add cheese, bacon/ham, green onions, and bell peppers into the muffin cups.
  5. Pour the egg mixture evenly into each cup (about 3/4 full).
  6. Bake for 18–22 minutes until the eggs are set and lightly golden.
  7. Let cool for a few minutes, then remove and serve.

Tips

  • Add spinach, mushrooms, or tomatoes for extra flavor.
  • Store in the fridge up to 4 days and reheat in the microwave.
