Fluffy Orange-Infused Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 3/4 cup buttermilk (or regular milk with 1 tsp vinegar)
  • 2 large eggs
  • 1/4 cup melted butter (or vegetable oil)
  • Zest of 1 large orange
  • 2 tbsp fresh orange juice
  • 1 tsp vanilla extract

Directions:

  1. Mix Dry Ingredients:
    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Mix Wet Ingredients:
    • In a separate bowl, whisk together the buttermilk, eggs, melted butter, orange zest, orange juice, and vanilla extract until fully combined.
  3. Combine Wet and Dry:
    • Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. It’s okay if the batter is a little lumpy, do not overmix to keep the pancakes fluffy.
  4. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
    • Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
    • Cook until bubbles start to form on the surface of the pancakes, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  5. Serve:
    • Serve the pancakes warm with extra orange slices, maple syrup, or a dusting of powdered sugar. You can also add whipped cream or a drizzle of honey for extra flavor.
