Ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 3/4 cup buttermilk (or regular milk with 1 tsp vinegar)
- 2 large eggs
- 1/4 cup melted butter (or vegetable oil)
- Zest of 1 large orange
- 2 tbsp fresh orange juice
- 1 tsp vanilla extract
Directions:
- Mix Dry Ingredients:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the buttermilk, eggs, melted butter, orange zest, orange juice, and vanilla extract until fully combined.
- Combine Wet and Dry:
- Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. It’s okay if the batter is a little lumpy, do not overmix to keep the pancakes fluffy.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
- Cook until bubbles start to form on the surface of the pancakes, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Serve:
- Serve the pancakes warm with extra orange slices, maple syrup, or a dusting of powdered sugar. You can also add whipped cream or a drizzle of honey for extra flavor.
